Crab Cakes

Crab cakes are very simple to make and make you look like a star when you serve
them at parties.

Serves 4
Cook time: 30 minutes

4 slices gluten-free bread
2 cups crab meat
2 eggs
1 teaspoon sea salt
½ cup chopped green onions, divided
½ cup homemade mayonnaise
1 Tablespoon Dijon mustard
1 Tablespoon Worcestershire sauce
2 Tablespoons extra-virgin olive oil

Pulse bread in food processor until reduced to fine crumbs. In a medium bowl,
lightly combine crab, eggs, half bread crumbs, ¾ of chopped green onions,
mayonnaise, Dijon and Worcestershire; form into patties. Mix remaining green
onions and bread crumbs. Coat patties in bread crumb mixture. In a medium
skillet, heat oil over medium heat and cook crab cakes on both sides until golden
brown. Remove to a paper towel to drain.
