Lemon-Rosemary Pan Roasted Chicken Breast

Marinate the chicken breast with the garlic, rosemary, s&p(optional), sugar, and half of the lemon juice for 10 minutes. Preheat oven to 400 degrees. Heat a skillet over medium-high heat; add the olive oil and chicken to the skillet. Cook for a few minutes until the chicken is browned. Turn over, and put in the oven for 10-15 minutes until cooked through. Brush chicken with the remaining lemon juice.

What is the Gluten-Free Casein-Free (GFCF) diet?  The GFCF diet excludes all foods that contain the proteins gluten and casein. Gluten is found in wheat, barley, rye, and possibly oats, while casein is found in dairy foods and beverages. For many children and adults these unique dietary proteins are either too difficult for their digestive system to properly breakdown or these proteins elicit an allergic reaction.

Children and adults that are most likely to benefit from the GFCF diet are those with one or more of these conditions: Celiac Sprue disease; wheat and milk allergies or intolerances; Autism Spectrum Disorder; and Attention-Deficit Hyperactivity Disorder (ADHD). In addition, a growing number of people are eliminating wheat from their diet in hopes of reducing their frequent headaches, lethargy, and diarrhea.

Chef Jeff will introduce you to the unique flavors and textures of gluten-free grains and cereals and non-dairy milks. Several gluten-free ancient grains are Amaranth, buckwheat, corn, millet, quinoa, all varieties of rice, potatoes (white and sweet) are gluten-free (GF) grains, cereals, and starches are available in most supermarkets today.

These GF grains can easily be incorporated into your GFCF diet.  A variety of alternative casein-free milks are available including soymilk, rice milk, and almond milk. However, the protein and calcium content of plant-based and casein-free milks vary significantly from cow’s milk. Excluding foods containing gluten and casein from one’s diet is not easy and careful diet planning needs to be done to ensure adequate intake of protein, calcium, vitamin D, and possibly other nutrients.
