Roasted Chicken and Tomato Tacos

Preheat oven to 500 degrees. In a bowl mix together the chicken, tomatoes, onion, and spices. Place on a baking sheet covered with foil and roast for 15 minutes. Let rest for a few minutes and then either pull the chicken in to shreds or chop and mix back with the other ingredients (including juice). Wrap the tortillas in damp paper towels and microwave for 30 seconds. Fill the tortillas with the chicken mixture.
